As is the case with ALL my recipes, I do not use processed white sugar or Crisco or anything like that.  So these cookies took a little massaging as this is my family chocolate chip cookie recipe from way back when and I made it gluten free and a bit healthier!

Of all the gluten free desserts, I have to say that these chocolate chip cookies are one of my favorites.  Not because they tastes more amazing than, say, Boston Cream Pie, but because they are so easy to make and are quite tasty!

And I don’t know about you, but it is always nice to have an easy chocolate chip cookie recipe on hand!  And even better to have the cookies on hand!

Are Chocolate Chips Gluten Free?

Many chocolate chips are gluten-free.  It is best to verify that whatever package of chocolate chips you choose are gluten free, however.

I use Lily’s chocolate chips which are not only low carb with no added sugar, but are definitely gluten free!

What is the Best Gluten Free Flour for Baking Gluten Free Chocolate Chip Cookies?

My favorite is Bob’s Red Mill 1 to 1 gluten free baking flour because it is formulated for baking.  It is not so easy to simply remove a gluten flour and expect everything else to go as planned in the recipe.

I learned that the hard way.  I’ve had to learn how to bake low carb (which these are not) and gluten free.  Both have their challenges.  Luckily I learned gluten free first so that all my low carb recipes are also gluten free.

If your gluten free flour does not have xanthan gum in it, then you may have to make adjustments in some recipes.

Xanthan gum basically provides the glue which is what gluten does so it is a good replacement.

Do You Need Xanthan Gum in Gluten Free Baking?

It depends on if you gluten free flour contains xanthan gum or not.  As I stated, I use Bob’s Red Mill 1 to 1 gluten free baking flour which actually does contain xanthan gum so I do not need to add it additionally in my baking.

But if your gluten free flour does not contain it, then often it will be a good idea to add it.  A tiny bit goes a long way!

The best way to store gluten free cookies is in an airtight container in the refrigerator. Now, if you are like me – they don’t last very long. I normally leave them on the counter if I know they will be eaten within a day two. Which they normally are….

How Long Are Gluten Free Chocolate Chip Cookies Good For?

Properly stored, these chocolate chip cookies should last for a week in the fridge.  Doubtful that they’ll still be there that long though because they are SO good!

These also freeze VERY well. So you can make a batch or two, freeze some and store some in the fridge!

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, add olive oil, butter, cane sugar and coconut sugar. Mix well with hand beaters.
  3. Add egg, vanilla and almond and combine well.
  4. Finally, add flour, baking soda, salt and chocolate chips. Continue mixing with hand beaters.
  5. Add dough dollops onto baking sheet and bake for 9 minutes.
  6. Let cool on baking sheet and remove when cool. Cookies are more crumbly when warm.
